Amazing! Power-through-the-day Bars

2 c. coconut
2 c. chopped nuts
2 c. chopped dates
1/2 c. flax seed
1/2 c. chia seed
1/2 c. raw cocoa, carob, or cacao powder
1/2 t. salt
2 t. vanilla
1 1/2 c. mini choc. chips
1 package plain gelatin (vegan)
1 1/2 c. raw honey

Mix all ingredients together and press into a 9X13 pan. Refrigerate or freeze to store.
